About 

The Full Story

Chef Carlos was born in San Juan, Puerto Rico where he spent most of his childhood. He later moved to  Orlando, Florida where he spends his school years. He then took up culinary arts at Le cordon Bleu College of Science in Culinary Arts.

Chef Carlos unique style of cooking comes from years of experience and experimenting in different cuisines, such as French, American, Caribbean, Italian, European, Spanish and Pan-Asian cuisines. Using amazing flavors to create unexpected fusions and creating a truly special personalized experience. He enjoys cooking with local quality ingredients that fit our seasons in the Rocky Mountains of Colorado.

Chef Carlos' culinary expertise were refined at prestigious locations bearing such names as Four Seasons, The Sonnenalp Hotel, The Arrabelle, The Alfond Inn, Universal Studios and Disney World.

In his free time, he enjoys the outdoors, dominating workouts in the local gym, training for triathlons, shredding down the slopes,  and expanding his culinary knowledge through reading his collection of  cookbooks.

When he isn't hard at work in the kitchen, Chef Carlos enjoys spending time with his Filipino wife Merry and their baby girl Leila.
